  • 1 teaspoon Vanilla no substitutions necessary
For Topping
  • 1 cup Chocolate Chips use semi-sweet or dark chocolate varieties
  • Flaked Sea Salt optional, sprinkle lightly on top

Method
 

Step-by-Step Instructions
  1. Prepare your baking dish by lining a 9x9 inch dish with parchment paper.
  2. Spread 1 cup of chopped pecans evenly across the bottom of the dish.
  3. In a medium-sized pot, combine 1 cup of butter, 1 cup of granulated sugar, 1/4 cup of water, and 1/2 teaspoon of salt. Heat over medium heat, stirring until fully melted.
  4. Attach a candy thermometer and heat until the mixture reaches 300°F, stirring occasionally.
  5. Remove from heat and stir in 1 teaspoon of vanilla extract.
  6. Carefully pour the hot toffee mixture over the layer of pecans.
  7. Sprinkle chocolate chips over the warm toffee and let them soften for 5 minutes.
  8. Swirl the melted chocolate into the toffee.
  9. Top with more pecans and a pinch of flaked sea salt. Let it cool completely at room temperature for about 4 hours.
  10. Once set, cut into bite-sized pieces.
