Step-by-Step Instructions for Baked Eggs Florentine with Creamy Spinach and Parmesan
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of unsalted butter in a large oven-safe skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add about 4 cups of fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper.
  4. Reduce heat to low and stir in 1/2 cup of heavy cream, 1 teaspoon of lemon zest, 1 tablespoon of lemon juice, and a pinch of nutmeg. Cook until it thickens slightly.
  5. Stir in 1/3 cup of grated Parmesan cheese until melted. Adjust seasoning with more salt and pepper if needed.
  6. Create small wells in the mixture and crack 4 large fresh eggs into the wells. Season the eggs with a sprinkle of salt and pepper.
  7. Sprinkle extra Parmesan over the dish and bake for 12-15 minutes until the whites are set and yolks are slightly runny.
  8. Allow to cool for a few minutes, then serve warm.
