Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing each of the 12 cups with cooking spray or olive oil.
  2. In a large mixing bowl, crack open your large eggs and whisk them vigorously until well blended and slightly frothy.
  3. Gently fold in the cottage cheese until smooth.
  4. Stir in shredded cheddar cheese thoroughly.
  5. Fold in chopped spinach and red bell pepper, along with garlic powder, salt, black pepper, and onion powder.
  6. Combine the baking powder with a splash of water in a small bowl and stir it into your egg mixture.
  7. Drizzle in the olive oil and mix until fully incorporated.
  8. Pour the mixture into the prepared muffin tin, filling each cup nearly to the top.
