Preparation Steps
- Soak the dried chillies and mushrooms in boiling water for about 15 minutes. Drain and set aside, reserving soaking water.
- Blend the soaked chillies, mushrooms, shallots, garlic, ginger, and a splash of reserved soaking water until a coarse paste forms.
- Press the firm tofu to remove moisture, cut into cubes, and toss with oil and cornflour until well coated.
- Preheat air fryer to 400°F (200°C). Air fry or bake the tofu for about 15 minutes or until golden brown.
- In a large pan, heat oil over medium-low heat and sauté the blended chili paste for about 2 minutes.
- Stir in coconut milk, soy sauce, sugar, and lime zest, simmering for 3-5 minutes until flavors meld.
- Fold crispy tofu into the sauce, add lime juice and desired dried chillies, serve over rice or noodles.
