Ingredients
  

For the Tofu
  • 14 ounces Firm Tofu Substitute with paneer if desired.
  • 2 tablespoons Cornflour For added crispiness.
For the Coconut Sauce
  • 1 cup Coconut Milk Key ingredient.
  • 3 pieces Dried Chillies Fresh chilies can be used for more heat.
  • 1 cup Dried Mushrooms Swap with mushroom sauce if preferred.
  • 2 pieces Shallots Onions can substitute in a pinch.
  • 2 cloves Garlic Fresh or powdered.
  • 1 inch Ginger Fresh or powdered.
For Flavor Balance
  • 2 tablespoons Lime Juice Fresh lime is best.
  • 1 teaspoon Lime Zest
  • 2 tablespoons Soy Sauce Use gluten-free version if preferred.
  • 1 teaspoon Sugar Can be omitted.

Method
 

Preparation Steps
  1. Soak the dried chillies and mushrooms in boiling water for about 15 minutes. Drain and set aside, reserving soaking water.
  2. Blend the soaked chillies, mushrooms, shallots, garlic, ginger, and a splash of reserved soaking water until a coarse paste forms.
  3. Press the firm tofu to remove moisture, cut into cubes, and toss with oil and cornflour until well coated.
  4. Preheat air fryer to 400°F (200°C). Air fry or bake the tofu for about 15 minutes or until golden brown.
  5. In a large pan, heat oil over medium-low heat and sauté the blended chili paste for about 2 minutes.
  6. Stir in coconut milk, soy sauce, sugar, and lime zest, simmering for 3-5 minutes until flavors meld.
  7. Fold crispy tofu into the sauce, add lime juice and desired dried chillies, serve over rice or noodles.
