Ingredients
  

For the Shrimp
  • 1 lb peeled and deveined raw shrimp or chicken/salmon as a substitute
For the Aromatics
  • 1 tsp sea salt reduce to 3/4 tsp if using fine table salt
  • 3/4 tsp black pepper for seasoning
  • 3 Tbsp extra-virgin olive oil for sautéing
  • 1 large shallot finely chopped
  • 4 cloves garlic minced
  • 1/2 cup red bell pepper finely chopped
For the Sauce
  • 2 Tbsp tomato paste
  • 1/2 tsp crushed red pepper flakes to taste
  • 3/4 cup vegetable or chicken broth lower-sodium
  • 2 tsp paprika
For the Creamy Base
  • 2 handfuls fresh baby spinach cooked until wilted
  • 1/2 cup heavy cream
  • 1-2 Tbsp fresh lemon juice to taste
  • 2 Tbsp chopped parsley for garnish

Method
 

Instructions
  1. Pat the shrimp dry, season with sea salt and black pepper.
  2. In a skillet, heat olive oil, sear shrimp for 3 minutes, flip and cook for 1 minute more.
  3. Add olive oil, sauté shallot and red bell pepper for 3-4 minutes.
  4. Stir in garlic, tomato paste, and crushed red pepper flakes, cooking for 2-3 minutes.
  5. Deglaze with broth, simmer for about 5 minutes until reduced by half.
  6. Incorporate paprika and spinach, stirring until spinach is wilted.
  7. Reduce heat, mix in heavy cream and lemon juice, season to taste, and simmer until thickened.
  8. Return shrimp to skillet, toss in sauce, and garnish with parsley before serving.
