Step-by-Step Instructions for Lemon Cream Chia Pudding
  1. In a mixing bowl, whisk together chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt until fully combined. Let it sit for approximately 5 minutes, then stir well again.
  2. Place the covered chia pudding mixture in the refrigerator to set for at least 3 hours or overnight for best results.
  3. While the chia pudding sets, soak raw cashews in hot water for about 1 hour. Drain them before blending.
  4. In a high-speed blender, combine the soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract. Blend until smooth.
  5. Distribute the chia pudding evenly into serving jars, aiming for about two-thirds full.
  6. Layer the creamy lemon mixture over the chia pudding in jars, ensuring an even spread.
  7. Return the jars to the refrigerator for another 3 hours to set the lemon cream layer.
  8. Before serving, top with fresh fruit or a sprinkle of additional lemon zest as desired.
