  • 1 medium Shallot Finely chopped; can substitute with onion.
  • 2 tbsp Olive Oil For sautéing; can use neutral oil.
  • 2 tbsp Butter Adds richness to the sauce.

  • 2 tbsp Lemon Juice Fresh lemon juice recommended.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Gather your salmon fillets for seasoning.
  2. Drizzle salmon with olive oil, season with salt, pepper, and red pepper flakes. Place on a lined baking sheet.
  3. Bake for 12-15 minutes until salmon flakes easily and is light pink in the center. Set aside to cool slightly.
  4. Gently flake the salmon into bite-sized pieces using a fork.
  5. In a large pot, boil water and add pasta. Cook until al dente. Reserve 1 cup of pasta water before draining.
  6. In a large skillet, heat olive oil and butter. Sauté shallots for 3-4 minutes, then add garlic and cook for 1 more minute.
  7. If using, pour in white wine, scraping the skillet to deglaze. Let simmer for 2 minutes.
  8. Add spinach, cooking until wilted, about 3-5 minutes.
  9. Reduce heat, stir in heavy cream and Parmesan until melted and creamy.
  10. Season sauce with salt, pepper, and red pepper flakes to taste.
  11. Stir in lemon juice and adjust sauce thickness with reserved pasta water as needed.
  12. Combine the cooked pasta and flaked salmon into the sauce, ensuring everything is evenly coated.
  13. Plate and garnish with parsley and additional Parmesan before serving.
