  • 8 ounces Rotini Pasta Use gluten-free pasta if needed.
  • 1 medium Cucumber Diced into small pieces.
  • 1 medium Carrot Finely chopped.
  • 1 medium Sweet Onion Can be swapped with green onions.
  • 1 cup Bell Pepper Consider using jarred fire-roasted peppers.
  • 1/2 cup Kalamata Olives Pitted and chopped.
  • 1/4 cup Fresh Parsley Dill can be used as a substitute.
For the Tzatziki Dressing
  • 1 cup Greek Yogurt Use unsweetened dairy-free yogurt for a vegan option.
  • 2 tablespoons Red Wine Vinegar White wine vinegar works too.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Onion Powder Optional for added complexity.
  • 1 teaspoon Dried Oregano Fresh oregano can be used as well.
  • 2 tablespoons Fresh Dill Or ½ teaspoon dried dill.

Method
 

Step-by-Step Instructions
  1. Cook the rotini pasta according to package instructions for about 8-10 minutes. Drain, rinse under cold water and let cool.
  2. In a large mixing bowl, combine the cooled rotini, diced cucumber, chopped carrot, sweet onion, sliced olives, and bell pepper. Toss gently.
  3. In a mason jar, combine Greek yogurt, red wine vinegar, lemon juice, minced garlic, onion powder, oregano, and dill. Shake until smooth.
  4. Pour the dressing over the pasta and veggie mixture. Fold gently to combine, then cover and refrigerate for at least one hour before serving.
