  • 2 cups Shredded Chicken Using rotisserie chicken makes it extra convenient.
  • 1 cup Diced Bell Pepper Feel free to use different bell pepper hues.
  • ½ cup Diced Red Onion Yellow or white onions can be used if needed.
  • ¼ cup Mayo Avocado oil mayo is an excellent choice.
  • 2 tablespoons Lime Juice Use fresh-squeezed juice for the best taste.
  • ¼ cup Chopped Cilantro Can be omitted or replaced with parsley.
  • 1 teaspoon Chili Powder Adjust based on your heat preference.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 1 teaspoon Salt Customize the amount to your preference.
Optional Dipping Sauce
  • 1 cup Guacamole Make it fresh for a richer flavor.
  • 1 cup Salsa Choose your preferred heat level.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine shredded chicken, diced bell pepper, diced red onion, mayo, lime juice, chopped cilantro, chili powder, garlic powder, and salt. Stir thoroughly until well combined.
  2. Place a cast iron or nonstick skillet over medium heat for about 3-4 minutes. Lightly spray with avocado oil.
  3. Microwave two tortillas at a time wrapped in a damp paper towel for 15-20 seconds to soften.
  4. Take a softened tortilla, place a spoonful of filling, and roll snugly. Place rolled taquitos seam-side down on a clean plate.
  5. Place 3-4 taquitos in the skillet, cooking for about 5 minutes until golden brown. Flip and cook for an additional 4-5 minutes until crispy.
  6. Carefully remove from skillet and serve on a bed of romaine lettuce with guacamole and salsa on the side.

Notes
