Method
 

Preparation
  1. Begin by grating the zucchini and carrot. Squeeze excess moisture using a kitchen towel.
  2. In a mixing bowl, combine cooked quinoa, zucchini, carrot, and lightly mashed chickpeas.
  3. Add bell pepper and green onions, mixing until well incorporated.
  4. Incorporate breadcrumbs, egg, soy sauce, and season with spices. Mix thoroughly.
  5. Form the mixture into 2-3 inch patties. Dampen hands if sticky.
  6. Heat oil in a skillet and cook patties for 4-5 minutes on each side until golden brown.
  7. Transfer to paper towels to absorb excess oil and serve warm.
