Step‑by‑Step Instructions
- Begin by preheating your oven to 400°F (200°C). While the oven heats up, line a rimmed baking sheet with aluminum foil or parchment paper for easy cleanup.
- Once your baking sheet is ready, arrange the thin lemon slices on it in a single layer.
- Next, take your fresh mahi mahi fillets and place them gently on top of the arranged lemon slices.
- In a small bowl, combine the paprika, garlic powder, dried oregano, sea salt, thyme, onion powder, black pepper, and red pepper flakes if you like a little heat. Sprinkle this seasoning blend evenly over your mahi mahi fillets.
- Place the baking sheet in the preheated oven and bake the mahi mahi for about 10 minutes.
- After baking, switch your oven to broil on high for an additional 1.5 minutes.
- Once broiling is complete, remove the baking sheet from the oven. Sprinkle the chopped parsley over the top of the mahi mahi for a burst of color and freshness.

Notes
Pat the mahi mahi dry before applying butter for better seasoning adherence. Store leftovers in an airtight container for up to 3 days.
