- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bring eggs and puff pastry to room temperature for about 30 minutes.
- Roll out puff pastry on a floured surface into a rectangle, approx. 11x14 inches.
- Prick the center of the pastry with a fork and brush the border with an egg wash.
- Bake the pastry for approx. 10 minutes until golden brown and lightly puffed.
- Spread Boursin cheese on the baked pastry, leaving edges clear, and crack eggs on top.
- Sprinkle with salt and bake for 12-14 minutes until egg whites are set.
- Add green onions and prosciutto after baking, then prepare the arugula salad.
- Dress arugula and serve on top, garnished with Parmigiano cheese.
