  • 1 sheet Puff Pastry Dough Thaw before use
For the Cheese Layer
  • 8 oz Boursin Cheese Or substitute with herbed goat cheese
For the Toppings
  • 4 oz Prosciutto Can substitute with crispy bacon or smoked salmon
  • 2 stalks Green Onions Sliced for garnish
  • 1 tbsp Everything But The Bagel Seasoning Optional
For the Salad
  • 2 cups Arugula Can swap with spinach or mixed greens
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice Use fresh-squeezed for the best flavor
  • 2 tbsp Parmigiano Cheese Shaved, can substitute with Parmesan or Pecorino

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bring eggs and puff pastry to room temperature for about 30 minutes.
  3. Roll out puff pastry on a floured surface into a rectangle, approx. 11x14 inches.
  4. Prick the center of the pastry with a fork and brush the border with an egg wash.
  5. Bake the pastry for approx. 10 minutes until golden brown and lightly puffed.
  6. Spread Boursin cheese on the baked pastry, leaving edges clear, and crack eggs on top.
  7. Sprinkle with salt and bake for 12-14 minutes until egg whites are set.
  8. Add green onions and prosciutto after baking, then prepare the arugula salad.
  9. Dress arugula and serve on top, garnished with Parmigiano cheese.
  10. Slice into portions and enjoy your brunch treat!
