Ingredients
  

For the Kofta
  • 1 lb Ground Chicken or ground turkey
  • 1 medium Onion finely chopped or substitute with shallots
  • 3 cloves Garlic minced; fresh garlic is best
  • 1/4 cup Fresh Parsley or cilantro
  • 1 tsp Ground Cumin or ground coriander
  • 1 tsp Ground Coriander or bay leaves
  • 1 tsp Salt adjust to taste
  • 1/2 tsp Ground Black Pepper or white pepper
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt for richness
  • 2 tbsp Lemon Juice or vinegar
  • 1 tbsp Olive Oil or avocado oil

Method
 

Instructions
  1. In a large mixing bowl, combine ground chicken with finely chopped onion, minced garlic, fresh parsley, ground cumin, and ground coriander. Sprinkle in salt and ground black pepper to enhance flavors. Use your hands to mix the ingredients until well combined, about 5 minutes.
  2. Wet your hands and form the mixture into compact, oval-shaped koftas, about 2-3 inches long. This process should take around 5-7 minutes.
  3. Preheat your grill to medium-high heat (approximately 400°F). Lightly oil the grill grates using a paper towel dipped in olive oil.
  4. Carefully place the koftas on the preheated grill. Grill for 10-12 minutes, turning occasionally to ensure even cooking, until golden brown.
  5. In a separate bowl, mix plain yogurt with freshly squeezed lemon juice and a pinch of salt to taste. Whisk until smooth, which should take a couple of minutes.
  6. Once the koftas are golden brown and cooked through, transfer them to a serving platter. Drizzle or serve the garlic yogurt sauce alongside.
