- Start by rinsing the cucumbers under cool running water to remove any dirt. Using a sharp knife, slice the cucumbers at an angle to create beautiful oval-shaped pieces, aiming for about ¼-inch thickness.
- Place the cucumber slices in a large mixing bowl and sprinkle with salt. Gently toss to ensure they're evenly coated, and let them sit for 10 minutes.
- Transfer the salted cucumber slices to the refrigerator for at least 20 minutes to chill. After chilling, drain any excess water that has accumulated.
- In the same mixing bowl, add sesame oil, light soy sauce, sugar, rice vinegar, and chili oil. Whisk together until well combined.
