Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F) to prepare for baking the zucchini.
  2. Trim the tops and bottoms of the zucchinis and scoop out the flesh to create boats.
  3. Brush the insides of the zucchinis with olive oil and oregano, and season with salt and pepper.
  4. Roast the zucchini boats in the oven for 12-15 minutes until slightly softened.
  5. Combine feta cheese, Gruyere cheese, Greek yogurt, spring onion, garlic powder, lemon zest, and parsley in a bowl.
  6. Stuff each roasted zucchini with the cheese mixture, mounding slightly above the edges.
  7. Bake the stuffed zucchinis in the oven for 30 minutes until the cheese is golden.
  8. Let cool slightly before serving. Drizzle with olive oil if desired.
