Ingredients
  

For the Patties
  • 1 lb Ground Beef (80% lean) Can substitute with ground turkey or lamb.
  • to taste Salt
  • to taste Freshly Ground Black Pepper
  • 1 tbsp Olive Oil For searing.
For the Buns & Cheese
  • 12 pieces Mini Brioche Buns Consider gluten-free buns or lettuce wraps.
  • 6 slices Sharp Cheddar Cheese Can swap with pepper jack or dairy-free cheese.
For the Toppings
  • 4 cups Mixed Lettuce Leaves Can use a variety of greens.
  • ½ cup Quick-Pickled Cucumber Thinly sliced.
For the Garlic Aioli
  • ½ cup Mayonnaise Opt for vegan mayo for dairy-free.
  • 2 cloves Garlic Minced.
  • 1 tsp Dijon Mustard
  • 1 tsp Fresh Lemon Juice

Method
 

Preparation
  1. In a large bowl, combine the ground beef with salt and pepper, then divide into twelve portions and shape into patties.
  2. Whisk together mayonnaise, minced garlic, Dijon mustard, and lemon juice for the garlic aioli, then refrigerate.
  3. Heat olive oil in a skillet over medium-high heat, cook patties for 3-4 minutes on each side, adding cheese before they finish.
  4. Toast mini brioche buns cut-side down in another skillet for about 30 seconds.
  5. Spread garlic aioli on each bun, assemble with lettuce, patties, and pickled cucumbers.
  6. Serve immediately with sides!
