Ingredients
  

For the Shrimp
  • 1 pound Shrimp Fresh or frozen
  • 2 tablespoons Olive Oil For marinating
  • 1 tablespoon Chili Powder Adjust for spice level
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder Can substitute with fresh garlic
  • 1 teaspoon Cumin
  • 1/2 teaspoon Cayenne Pepper Adjust for heat preference
  • 1 lime Lime Juice Freshly squeezed
For the Tacos
  • 8 count Tortillas Corn or flour, warmed
  • 2 cups Cabbage Shredded
  • 1 cup Carrot Shredded or julienned
  • 1 count Jalapeño Optional, sliced
For the Avocado Crema
  • 2 count Avocado Ripe
  • 1/2 cup Greek Yogurt Substitute with dairy-free yogurt if preferred
  • 1 tablespoon Lime Juice For seasoning
  • 1 clove Garlic Optional
  • 1/4 cup Cilantro For garnish, optional

Method
 

Marinate and Cook Shrimp
  1. In a medium bowl, combine shrimp with olive oil, chili powder, smoked paprika, garlic powder, cumin, cayenne, salt, pepper, and lime juice. Toss thoroughly and marinate for about 10 minutes.
  2. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once hot, add marinated shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat.
Prepare Avocado Crema
  1. In a blender, combine avocado, Greek yogurt, lime juice, garlic, and cilantro. Blend until smooth, adjusting consistency with water if needed.
Assemble Tacos
  1. Warm tortillas and layer shredded cabbage, carrots, and cooked shrimp on each tortilla. Top with avocado crema and optional jalapeños.
  2. Serve immediately with lime wedges.
