  • 2 tablespoons light soy sauce or tamari for gluten-free
  • 2 tablespoons Kewpie mayo or regular mayo if unavailable
  • 1 teaspoon Sriracha adjust to heat preference
  • 1 teaspoon sesame oil can replace with olive oil
For the Sushi Rice
  • 1 cup sushi rice do not substitute with long-grain
  • 2 tablespoons rice vinegar or white vinegar with sweetness adjustment
  • 1 tablespoon white sugar or honey/agave syrup adjusting liquid ratios
For the Sushi Cups
  • 10-12 sheets nori sheets cut to fit muffin tin
  • 1 tablespoon furikake omit if unavailable
  • 2 stalks green onion can replace with chives
For Assembly
  • 1 can cooking spray or olive oil as alternative

Method
 

Step-by-Step Instructions
  1. Prepare the sushi rice by cooking according to package instructions, about 20 minutes. Fold in rice vinegar and sugar; cool slightly.
  2. Preheat oven to 400°F (200°C). Dice salmon, mix with soy sauce, Kewpie mayo, sriracha, and sesame oil until coated.
  3. Cut nori sheets into squares to fit muffin tin, about 10-12 squares needed.
  4. Grease muffin tin compartments with cooking spray. Place nori into each, add sushi rice, press down, and top with salmon mixture.
  5. Bake in preheated oven for about 15 minutes until salmon is cooked and the tops are golden.
  6. Let cool for a few minutes, drizzle with sriracha or mayo, and sprinkle furikake and green onions before serving.
