Preparation Steps
  1. In a medium skillet, heat 2 tablespoons of extra virgin olive oil over medium-low heat. Add 2 cloves of minced garlic and sauté for about 1 minute until it turns golden and fragrant, but not browned. Remove the skillet from heat and allow the oil to cool for a few minutes.
  2. In a large mixing bowl, combine the cooled oil with 4 diced Roma tomatoes, 1/4 cup of finely shredded Parmesan cheese, and 1/4 cup of fresh basil, chopped chiffonade-style. Drizzle in 1 tablespoon of balsamic vinegar along with a pinch of kosher salt and freshly ground black pepper to taste. Gently toss the mixture until well combined.
  3. Preheat your broiler to high. Lay 8 hearty slices of French bread on a baking sheet and place them under the broiler. Toast for approximately 1 minute on each side until the bread is golden brown and crisp. Keep a close eye on them to prevent burning.
  4. Once the bread is toasted, remove it from the oven and top each slice generously with the prepared tomato mixture. Spoon any juicy remnants from the bowl over the top for extra flavor. If desired, garnish with additional Parmesan cheese before serving.
