Pancake Instructions
- Separate the egg yolks into a large mixing bowl and the whites into a smaller bowl.
- In the bowl with the egg yolks, whisk together the buttermilk, melted butter, and vanilla extract until combined.
- Sift in the flour, sugar, baking powder, baking soda, and salt into the wet mixture. Gently stir until just combined.
- Beat the egg whites on medium speed until soft peaks form, about 4-5 minutes.
- Fold the whipped egg whites into the batter gently.
- Allow the batter to rest for about 10-15 minutes.
- Heat a skillet over medium heat and lightly grease it. Pour 1/3 cup of batter for each pancake.
- Cook until bubbles form, about 2-3 minutes. Flip and cook until golden brown.
- Serve warm with butter and syrup or fresh fruits.
