  • 8 oz Cream Cheese Greek yogurt or hummus can be a lighter alternative.
  • 2 tbsp Mayonnaise Can substitute with avocado or dairy-free mayo.
  • 1 tsp Garlic Powder Fresh garlic can be used instead.
  • 1 tbsp Dill Can swap for parsley or chives.
For the Filling
  • 2 cups Vegetables (e.g., bell peppers, cucumbers, spinach) Finely diced and dried.
  • 1 cup Cheese (optional) Use your favorite cheese or omit for dairy-free.

Equipment

  • mixing bowl
  • microwave-safe plate
  • Spatula
  • Plastic Wrap

Method

Preparation Steps
  1. Finely dice your choice of fresh vegetables, ensuring they are small enough for easy rolling. Pat them dry with a paper towel to avoid sogginess.
  2. Allow the cream cheese to soften at room temperature for about 15 minutes. In a mixing bowl, combine the cream cheese with mayonnaise, garlic powder, dill, salt, and pepper. Stir until smooth.
  3. Warm the tortillas in the microwave for about 15-20 seconds to soften.
  4. Spread the cream cheese mixture evenly over each warmed tortilla, leaving a 1/2 inch border.
  5. Sprinkle a layer of diced vegetables and cheese (if using) over the cream cheese spread. Carefully roll the tortilla tightly.
  6. Wrap each tortilla tightly in plastic wrap and refrigerate for at least 2 hours to chill.
  7. Unwrap and slice the chilled roll ups into pinwheels about 1 inch thick, securing with toothpicks if desired.
