Step-by-Step Instructions
  1. Begin by cooking rice in chicken broth according to package instructions, about 15-20 minutes. Stir in lime zest and cilantro once done.
  2. Pat chicken dry and rub with chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Let sit for 10 minutes.
  3. Heat olive oil in a skillet. Sear chicken for 6-7 minutes on each side until golden brown and cooked through. Let rest for 5 minutes.
  4. Toss corn with melted butter on a baking sheet. Broil for 4-5 minutes, stir, then broil for another 3-4 minutes until charred. Mix with lime juice, cotija cheese, and Tajín.
  5. Whisk sour cream, mayonnaise, lime juice, garlic, and cayenne in a bowl until smooth. Adjust consistency if needed.
