  • 1 clove Garlic minced; use garlic powder as substitute if needed
Salad Base
  • 4 cups Chopped Napa Cabbage or green cabbage or kale
  • 2 cups Shredded Rotisserie Chicken or homemade cooked chicken
  • 1 cup Shredded Carrots matchstick or grated
  • 1/4 cup Sliced Green Onions or shallots
  • 1 cup Roasted, Salted Cashews or sunflower seeds for nut-free
  • 1/4 cup Fresh Cilantro or parsley
Optional Garnish
  • Toasted Sesame Seeds or poppy seeds

Method
 

Preparation
  1. In a glass jar or measuring cup, combine tahini, tamari, rice vinegar, maple syrup, toasted sesame oil, and minced garlic. Whisk until smooth and set aside.
  2. In a large mixing bowl, add napa cabbage, shredded chicken, shredded carrots, sliced green onions, and roasted cashews. Lightly season with salt.
  3. Pour the prepared dressing over the salad mixture and gently toss until evenly coated.
  4. Serve immediately or refrigerate in an airtight container for up to 2 days.
