Ingredients
  

For the Chicken
  • 1 pound boneless chicken thighs or breasts for a tender bite
  • 1 cup buttermilk or milk mixed with vinegar or lemon juice
  • 1 cup flour gluten-free flour can be substituted
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder fresh garlic is an alternative
  • 1 teaspoon paprika smoked paprika can be used
  • 1 tablespoon Tony’s Seasoning or regular Cajun seasoning
For the French Toast
  • 4 large eggs for binding
  • 1 cup milk any milk alternative works
  • 1 teaspoon almond extract or vanilla vanilla is a classic
  • 1 teaspoon cinnamon add nutmeg for extra depth
  • 1/4 teaspoon nutmeg optional
  • 1/4 teaspoon salt
  • 8 slices brioche bread or challah or Texas toast
  • 2 tablespoons butter for cooking
For Frying
  • 1.5 cups vegetable oil for frying

Method
 

Step-by-Step Instructions
  1. Marinate the chicken by immersing in buttermilk, adding salt and pepper, and refrigerate for at least 30 minutes to 2 hours.
  2. Heat vegetable oil in a Dutch oven to 350°F.
  3. Prepare the dredge by mixing flour, onion powder, garlic powder, paprika, and Tony’s seasoning.
  4. Dredge marinated chicken in the flour mixture and fry in hot oil for about 7 minutes per side.
  5. Make the bourbon sweet chili sauce in a saucepan, simmer for 5-7 minutes.
  6. Prepare the egg mixture, whisking eggs, milk, almond extract or vanilla, cinnamon, nutmeg, and salt.
  7. Cook soaked brioche in butter for 3-4 minutes per side until golden brown.
  8. Assemble the sandwich with fried chicken and bourbon sweet chili sauce between two slices of French toast.
