Ingredients
  

For the Oreo Crust
  • 24 cookies Oreo Cookies crushed
  • 5 tablespoons Butter melted unsalted
For the Red Velvet Layer
  • 1 box Red Velvet Cake Mix or beetroot powder
  • 1/2 cup Vegetable Oil or melted coconut oil
  • 1 cup Water or buttermilk
  • 3 large Eggs fresh
For the Cheesecake Layer
  • 16 ounces Cream Cheese softened
  • 1 cup Granulated Sugar adjust to taste
  • 1 cup Sour Cream or Greek yogurt
  • 3 large Eggs
For the Toppings
  • 1/2 cup Red Velvet Glaze for drizzle
  • 1 cup Whipped Cream preferably homemade
  • 1/2 cup Crushed Oreos for sprinkling

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). Crush about 24 Oreo cookies until fine crumbs. Combine with 5 tablespoons of melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
Make the Red Velvet Cake Layer
  1. Combine the red velvet cake mix with water, vegetable oil, and eggs, mix and pour into a greased baking dish. Bake for 20-25 minutes, allow to cool completely.
Prepare Cheesecake Layer
  1. Beat 16 ounces of cream cheese until smooth, gradually add 1 cup sugar, then 1 cup sour cream. Add 3 eggs one at a time, mixing just until combined.
Assemble and Bake
  1. Pour the cheesecake mixture over the cooled red velvet layer and bake for 50-60 minutes until just set. Turn off the oven, crack the door and let it cool for 1 hour.
Cool Gradually
  1. Transfer the cheesecake to the fridge and chill for at least 4 hours or overnight for optimal flavor.
Decorate
  1. Once chilled, drizzle with red velvet glaze, add whipped cream, and sprinkle crushed Oreos on top.
