- In a mixing bowl, add rolled oats, chia seeds, ground cinnamon, nutmeg, and salt. Whisk together until well blended.
- Pour in oat milk, maple syrup, vegan cream cheese, and vanilla bean paste. Add grated carrots and stir until creamy.
- Divide the mixture between two glass jars, seal, and refrigerate for at least 4 hours or overnight.
- Before serving, stir and top each jar with plant-based yogurt and crushed pecans or extra grated carrots.
