Method
 

Meringue Preparation
  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In your mixing bowl, beat the egg whites until frothy, then add cream of tartar and continue to beat until soft peaks form.
  3. Gradually add sugar while beating until stiff peaks form and the meringue is glossy.
  4. Pipe small meringue circles on the lined baking sheet and bake for 1.5 to 2 hours.
  5. Allow meringues to cool completely in the oven.
Mousse Preparation
  1. Melt the white chocolate in a heatproof bowl over simmering water and set aside to cool.
  2. Whip the heavy cream until soft peaks form, then gently fold in the melted chocolate and vanilla extract.
Dessert Assembly
  1. Layer the mousse and meringues by placing a meringue on a plate, adding a dollop of mousse on top, and repeating the process until all ingredients are used.
