Meringue Preparation
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In your mixing bowl, beat the egg whites until frothy, then add cream of tartar and continue to beat until soft peaks form.
- Gradually add sugar while beating until stiff peaks form and the meringue is glossy.
- Pipe small meringue circles on the lined baking sheet and bake for 1.5 to 2 hours.
- Allow meringues to cool completely in the oven.
Mousse Preparation
- Melt the white chocolate in a heatproof bowl over simmering water and set aside to cool.
- Whip the heavy cream until soft peaks form, then gently fold in the melted chocolate and vanilla extract.
Dessert Assembly
- Layer the mousse and meringues by placing a meringue on a plate, adding a dollop of mousse on top, and repeating the process until all ingredients are used.
