- In a medium saucepan, pour in 4 cups of fresh, cold water and bring it to a rolling boil over medium-high heat.
- Once your water is boiling, stir in 2 tablespoons of Kashmiri green tea and allow it to boil for about 5 minutes.
- Add ½ teaspoon of baking soda into the boiling tea mixture and continue to boil for an additional 2 minutes.
- Introduce 1-2 star anise, several crushed cardamom pods, and 1 cinnamon stick into the boiling pot.
- Reduce the heat to low and let the mixture simmer for 20-30 minutes, allowing the liquid to reduce by half.
- Stir in ¼ teaspoon of salt and slowly add 2 cups of whole milk, stirring continuously.
- Remove from heat and carefully strain the chai into a serving teapot or cups.
- Taste your chai and add sugar or honey as desired, mixing thoroughly until fully dissolved.
- Pour into cups and garnish with crushed nuts like almonds or pistachios.
