Method
 

Instructions
  1. In a large mixing bowl, blend the room temperature cream cheese and large egg together on medium speed for about 2 minutes until smooth and creamy.
  2. Add in the vanilla extract and beat for an additional 30 seconds.
  3. In a separate bowl, sift together the blanched almond flour, coconut flour, granulated sweetener, baking powder, and salt.
  4. Gradually add the dry mixture into the wet cream cheese mixture, folding gently until no dry flour is visible.
  5. Cover the bowl with plastic wrap and refrigerate the cookie dough for at least 1 hour.
  6. Preheat your oven to 350°F (175°C).
  7. Once chilled, use a cookie scoop to form 11 dough balls and place them on a parchment-lined baking sheet.
  8. Bake your cookies in the preheated oven for about 15 minutes, or until edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for at least 15 minutes.
