- In a large mixing bowl, blend the room temperature cream cheese and large egg together on medium speed for about 2 minutes until smooth and creamy.
- Add in the vanilla extract and beat for an additional 30 seconds.
- In a separate bowl, sift together the blanched almond flour, coconut flour, granulated sweetener, baking powder, and salt.
- Gradually add the dry mixture into the wet cream cheese mixture, folding gently until no dry flour is visible.
- Cover the bowl with plastic wrap and refrigerate the cookie dough for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- Once chilled, use a cookie scoop to form 11 dough balls and place them on a parchment-lined baking sheet.
- Bake your cookies in the preheated oven for about 15 minutes, or until edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for at least 15 minutes.
