Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prick the sweet potatoes with a fork several times. Place them on the prepared baking sheet and roast for 40-50 minutes until fork-tender.
  3. In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and feta cheese. Stir gently.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper.
  5. Pour the dressing over the filling mixture and gently fold everything to ensure even coating.
  6. Carefully slice the roasted sweet potatoes open lengthwise and fluff the insides with a fork.
  7. Generously fill each potato with the Mediterranean mixture. Serve immediately, garnished with fresh herbs or olive oil.
