Method
 

Cooking Instructions
  1. Preheat your oven to a gentle 225°F (107°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Place the salmon fillet on the lined baking sheet, skin-side down. Drizzle approximately a tablespoon of extra-virgin olive oil over the top and season with kosher salt.
  3. Slide the baking sheet into your preheated oven and let the salmon cook slowly for 40 to 45 minutes.
  4. Once the salmon is finished cooking, let it cool for a few minutes before flaking into large chunks.
  5. Combine diced shallot, white wine vinegar, and chopped fresh herbs in a bowl. Add a splash of extra-virgin olive oil and mix well.
  6. Spoon the herby vinaigrette over the flaked salmon and serve with your favorite sides.
