- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Whisk until well mixed.
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Mix in the large egg, vanilla extract, and peppermint extract. Add green food coloring if desired.
- Gradually add the whisked dry ingredients into the wet mixture. Mix just until combined and fold in the crushed Mint Oreos.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- Scoop about 3 tablespoons of dough onto the prepared baking sheets, leaving space between each.
