Preparation Steps
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, chopped fresh dill, mint, lemon zest, and black pepper. Stir until well combined.
- Layer two sheets of phyllo pastry, brushing each with olive oil, then cut into four strips.
- Place a tablespoon of the feta mixture at the end of each phyllo strip, fold the sides over, and roll tightly.
- Place rolls seam-side down on the baking sheet, brush tops with olive oil, and bake for 18-20 minutes.
- In a small saucepan, combine honey, chili flakes, and lemon juice. Heat on low until warm and runny.
- Once baking is complete, drizzle warm chili honey over the rolls and serve.
