- Gently pat the salmon fillets dry and season both sides with salt and pepper.
- In a mixing bowl, whisk together peach preserves, apple cider vinegar, Dijon mustard, and minced garlic until smooth.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear salmon fillets skin-side down for 2-3 minutes.
- Flip the salmon, pour half of the peach glaze on top, and bake for about 8-12 minutes until salmon is cooked through.
- Brush the remaining glaze on the salmon during the last 2 minutes of baking.
- Remove from oven, let rest for a few minutes, and garnish with fresh parsley or chives.
