  • 1 tsp Baking soda
  • 1/2 tsp Kosher salt
  • 1/2 cup Mini chocolate chips Regular chocolate chips can be used or omitted for a healthier option.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix coconut oil, coconut sugar, peanut butter, vanilla extract, and eggs until well blended and smooth.
  3. Gradually add the cottage cheese and milk to the wet mixture, whisking until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt, then fold in mini chocolate chips.
  5. Mix the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  6. Fill each muffin liner about 2/3 full with the batter, and sprinkle a few extra chocolate chips on top if desired.
  7. Bake for 23-25 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
