Method
 

Prepare Mascarpone Cold Foam
  1. Soften the mascarpone cheese in the microwave for about 10 seconds until just pliable. In a mixing bowl, combine the softened mascarpone with heavy cream, whole milk, and vanilla syrup. Use a milk frother on medium-high speed for about 1-2 minutes until creamy peaks form, and then set aside.
Make Latte Base
  1. In a saucepan, combine whole milk, vanilla syrup, and unsweetened cocoa powder over medium heat. Whisk continuously for about 3 minutes until the mixture is warm (but not boiling) and well blended.
Brew Coffee
  1. Brew a shot of espresso (or strong coffee) in a large coffee mug.
Combine
  1. Carefully pour the milk mixture over the brewed espresso in your mug.
Top
  1. Spoon the mascarpone cold foam generously on top of the latte and dust with cocoa powder. Add a lady finger on the side if desired.
