- Wash the cucumber thoroughly. Peel if desired, chop pineapple, squeeze lime juice, and gather mint and ginger.
- In a blender, blend cucumber, pineapple, lime juice, ginger, mint, and water for about 30 seconds until smooth.
- Add 2-4 tablespoons of maple syrup if desired, blend again for 10 seconds, and adjust sweetness if needed.
- Optional: Strain the mixture through a fine mesh strainer to remove pulp for a smoother drink.
- Pour the liquid into a pitcher filled with ice and serve immediately over ice.
- If desired, add 1 oz. of gin or vodka to each glass before serving and garnish with mint.
