Method
 

Step-by-Step Instructions
  1. Wash the cucumber thoroughly. Peel if desired, chop pineapple, squeeze lime juice, and gather mint and ginger.
  2. In a blender, blend cucumber, pineapple, lime juice, ginger, mint, and water for about 30 seconds until smooth.
  3. Add 2-4 tablespoons of maple syrup if desired, blend again for 10 seconds, and adjust sweetness if needed.
  4. Optional: Strain the mixture through a fine mesh strainer to remove pulp for a smoother drink.
  5. Pour the liquid into a pitcher filled with ice and serve immediately over ice.
  6. If desired, add 1 oz. of gin or vodka to each glass before serving and garnish with mint.
