  • 2 pieces Chinese Eggplants Italian eggplants can be substituted

  • 1 tablespoon Thai Red Chili Use fresh or dried chili flakes based on preference
  • 2 tablespoons Green Onion Replace with chives for a milder taste
  • 3 tablespoons Vegetarian Oyster Sauce Soy sauce can be used in a pinch
  • 1 tablespoon Sugar Honey or maple syrup can be used as substitutes
  • 1 tablespoon Sesame Oil Light olive oil may be used for a less intense taste

Preparation and Cooking
  1. Prep Eggplants: Cut off the tops and slice each eggplant in half lengthwise.
  2. Initial Frying: Preheat your air fryer to 380°F (190°C). Place the halved eggplants in the basket and air fry for 12 minutes.
  3. Make Sauce: Combine garlic oil, chopped Thai red chili, sliced green onion, vegetarian oyster sauce, sugar, and sesame oil in a medium bowl and mix well.
  4. Final Cooking: After frying, open each eggplant half with a fork and drizzle the sauce inside. Increase air fryer to 400°F (200°C) and air fry for another 7 minutes.
  5. Serve: Remove from air fryer, garnish with sliced green onions and sesame seeds, and serve warm with steamed rice or noodles.
