Preparation and Cooking
- Prep Eggplants: Cut off the tops and slice each eggplant in half lengthwise.
- Initial Frying: Preheat your air fryer to 380°F (190°C). Place the halved eggplants in the basket and air fry for 12 minutes.
- Make Sauce: Combine garlic oil, chopped Thai red chili, sliced green onion, vegetarian oyster sauce, sugar, and sesame oil in a medium bowl and mix well.
- Final Cooking: After frying, open each eggplant half with a fork and drizzle the sauce inside. Increase air fryer to 400°F (200°C) and air fry for another 7 minutes.
- Serve: Remove from air fryer, garnish with sliced green onions and sesame seeds, and serve warm with steamed rice or noodles.
