  • 1.5 oz Empress 1908 Indigo Gin Can substitute with any floral gin

Method
 

Cocktail Preparation
  1. In a cocktail shaker, combine pineapple juice, lemon juice, and orgeat syrup. Shake gently for about 10 seconds until cold.
  2. Fill the shaker halfway with ice and shake vigorously for 15 seconds until thoroughly chilled.
  3. Fill a Collins glass with crushed ice and strain the mixture into the glass, allowing the yellow from the pineapple to cascade.
  4. Gently float the Empress Indigo Gin on top by slowly pouring it over the back of a bar spoon.
  5. Garnish with a slice of fresh pineapple on the rim and serve immediately.
