Cocktail Preparation
- In a cocktail shaker, combine pineapple juice, lemon juice, and orgeat syrup. Shake gently for about 10 seconds until cold.
- Fill the shaker halfway with ice and shake vigorously for 15 seconds until thoroughly chilled.
- Fill a Collins glass with crushed ice and strain the mixture into the glass, allowing the yellow from the pineapple to cascade.
- Gently float the Empress Indigo Gin on top by slowly pouring it over the back of a bar spoon.
- Garnish with a slice of fresh pineapple on the rim and serve immediately.
