Ingredients
  

For the Chickpeas
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoons Olive oil or avocado oil
  • 1 teaspoon Paprika smoked paprika for depth
  • 1 teaspoon Ground black pepper
  • 1/4 teaspoon Cayenne pepper optional
  • 1 teaspoon Salt to taste
For the Wrap
  • 4 pieces Pita flatbreads gluten-free if needed
  • 1 cup Tzatziki store-bought or homemade
For the Veggies
  • 1 medium Red onion thinly sliced
  • 2 cups Lettuce leaves or mixed greens
  • 1 medium Tomato diced

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (204°C). Rinse chickpeas under cold water, spread on a towel to dry.
  2. In a bowl, combine dried chickpeas with olive oil, paprika, black pepper, cayenne, and salt. Toss until coated.
  3. Spread chickpeas on a greased baking sheet. Roast for about 20 minutes, stirring halfway through.
  4. Assemble your gyros by spreading tzatziki on a pita, adding roasted chickpeas, and topping with veggies.
  5. Wrap the pita around the filling and serve immediately.
