  • 1 cup Roasted Red Bell Peppers Chopped.
  • 2 tbsp Capers Optional.

Step-by-Step Instructions
  1. Marinate the shrimp by placing them in a bowl with olive oil and Cajun seasoning for at least 15 minutes.
  2. Cook the fettuccini in boiling salted water for 8-10 minutes until al dente, then drain.
  3. Sauté mushrooms and shallots in butter for 5-7 minutes until tender.
  4. Cook the marinated shrimp in the same skillet for 2-3 minutes until pink and opaque.
  5. Pour chicken broth into the skillet, bring to a boil, and reduce for 2-3 minutes.
  6. Mix sour cream and cornstarch until smooth, then add to the skillet and stir until thickened.
  7. Combine sautéed vegetables, shrimp, roasted bell peppers, and capers into the sauce.
  8. Serve the shrimp stroganoff over cooked fettuccini.
