Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper, then heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until golden brown and cooked through, reaching 165°F. Allow to rest for 5 minutes, then slice thinly.
  2. Prepare the ingredients: Slice the avocado and cheese, chop the red onion, and slice the tomato. Gather mayonnaise and Dijon mustard.
  3. Spread mayonnaise and Dijon mustard on one side of each slice of bread. Lay slices mayonnaise side down on a clean surface.
  4. Assemble by layering grilled chicken, avocado, cheese, red onion, and tomato on top of one slice of bread, then place the second slice on top with the mayo side facing down.
  5. Heat butter or olive oil in the skillet over medium heat. Grill sandwiches for 3-4 minutes until golden brown and cheese melts, then flip and grill the other side.
