Preparation Steps
- Preheat your oven to 400°F (200°C). Crumble or shred super firm tofu using a box grater.
- Mix tofu with oil, tamari, garlic powder, and cornstarch, and bake for 20–25 minutes until golden and crispy.
- Combine shredded veggies with lime juice, salt, and sugar, and let sit for about 10-15 minutes.
- In a saucepan, whisk together tamari, hoisin sauce, rice wine vinegar, maple syrup, garlic, ginger, and vegetable broth.
- Mix a cornstarch slurry with water and add it to the sauce, stirring until it thickens.
- Toss baked tofu in the sauce and let it simmer for 2-3 minutes.
- Assemble wraps with sriracha mayo, fresh greens, pickled veggies, and tofu mixture. Roll tightly.
