  • 4 medium Zucchini Sliced in half, seeds scooped out
  • 1 lb Ground Beef Cooked and seasoned
  • 1 cup Shredded Cheese Cheddar or your choice
  • 1 cup Diced Tomatoes Drained
  • 1 tsp Italian Seasoning

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, seasoning with Italian seasoning.
  3. Mix in the diced tomatoes and half of the cheese into the cooked beef.
  4. Scoop the beef mixture into the hollowed zucchini halves and top with the remaining cheese.
  5. Place the stuffed zucchini on a baking sheet and bake for 30 minutes.
  6. Allow to cool for 10 minutes before serving.
