Ingredients
  

For the Patties
  • 1 pound Salmon Fillet, skinless pin bones removed
  • 2 tablespoons Dijon Mustard
  • 3 tablespoons Mayonnaise olive oil mayonnaise preferred
  • 1 medium Shallot, finely chopped or substitute with onion or green onions
  • 1 tablespoon Capers optional
  • 1 tablespoon Lemon Juice fresh preferred
  • 2 tablespoons Fresh Dill or substitute with basil or parsley
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1/4 teaspoon Cayenne Pepper optional
  • 1/2 cup Breadcrumbs panko for crunchier texture
For the Herb Aioli
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1 clove Garlic, minced optional
  • 2 tablespoons Scallions, chopped or substitute with chives
For Serving
  • 4 pieces Brioche Buns or lettuce wraps for a low-carb option
  • to taste Toppings (e.g., Tomato, Red Onion, Avocado) customize as desired

Method
 

Preparation of Salmon
  1. Coarsely chop the skinless salmon fillet in a food processor until slightly chunky. Add in Dijon mustard, mayonnaise, finely chopped shallots, capers, lemon juice, fresh dill, sea salt, black pepper, and cayenne pepper. Pulse until just combined.
Form the Patties
  1. Transfer the salmon mixture to a large bowl and gently fold in the breadcrumbs until fully incorporated. Shape into 4 equal patties, roughly ¾ inch thick. Chill in the refrigerator for 15-20 minutes.
Make Herb Aioli
  1. Mix mayonnaise, minced garlic, lemon juice, capers, chopped dill, and sliced scallions in a separate bowl. Season with salt and pepper, stirring until smooth. Refrigerate until serving.
Cooking the Burgers
  1. For grilling, preheat to medium-high, oil the grates, and grill for about 4 minutes per side until internal temperature is 125°F to 130°F. For stovetop, pan-sear in oil for 3-4 minutes per side. For air frying, preheat to 350°F and cook for 3-4 minutes on each side.
Serving
  1. Place on brioche buns or lettuce wraps and generously spread with herb aioli. Add preferred toppings and serve.
