Ingredients
  

For the Salmon
  • 1.5 lbs center-cut salmon filet, skin removed main protein source
  • 0.25 cup soy sauce or Tamari/coconut aminos for gluten-free
  • 2 tablespoons honey adds sweetness
  • 1 tablespoon sriracha adjust for spice preference
  • 2 cloves garlic, grated enhances flavor
  • 2 teaspoons ginger, grated or ginger paste
For the Spicy Mayo
  • 0.33 cup Kewpie Mayo or regular mayonnaise
  • 1 teaspoon sesame oil adds flavor
For the Bowl
  • 4 cups steamed rice can substitute with brown rice or quinoa
  • 2 Persian or baby cucumbers, cut into half moons fresh topping
  • 1 avocado, sliced adds creaminess
  • 1 cup shelled edamame, steamed boosts protein
  • sesame seeds and nori sheets for garnish

Method
 

Preparation Steps
  1. In a medium bowl, whisk together soy sauce, honey, sriracha, garlic, and ginger until smooth. Set aside.
  2. Pat salmon dry and cut into 1½ inch cubes. Toss in the marinade and let sit for 20-30 mins.
  3. In a small bowl, mix kewpie mayo, sriracha, sesame oil, and a dash of soy sauce until combined. Refrigerate until ready.
  4. Preheat oven to 400°F. Spread marinated salmon on a lined baking sheet and bake for 8-10 mins. Broil if needed for crispy finish.
  5. Divide rice among bowls. Top with salmon, cucumbers, avocado, and edamame.
  6. Drizzle with spicy mayo and garnish with sesame seeds and nori sheets. Serve and enjoy!
