Ingredients
  

Crust
  • 36 pieces Oreo cookies finely crushed
  • ½ cup Unsalted butter melted
Chocolate Cheesecake Layer
  • ½ cup Unsalted butter softened
  • 8 oz Cream cheese softened
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract opt for pure vanilla
  • 2 packets Milk-chocolate hot cocoa mix
  • 1 tbsp Cocoa powder
  • cups Whipped topping or whipped cream for lightness
Mint Layer
  • 3 boxes Instant vanilla pudding mix 3.4 oz each
  • 3 cups Cold milk
  • 1 tsp Mint extract or peppermint extract, start with less
  • Green food coloring optional
  • cups Whipped topping or whipped cream
Topping
  • Whipped cream optional
  • Maraschino cherries
  • Green sprinkles

Method
 

Preparation Steps
  1. Finely crush 36 Oreo cookies and mix with ½ cup melted unsalted butter. Press into a 9x13-inch dish. Refrigerate for 20 minutes.
  2. Beat together ½ cup softened unsalted butter, 8 oz softened cream cheese, 1 cup powdered sugar, and 1 tsp vanilla extract until smooth. Blend in 1 tbsp cocoa powder and 2 packets of hot cocoa mix. Fold in 1¼ cups whipped topping and spread over the crust. Refrigerate for 20 minutes.
  3. Whisk together 3 boxes instant vanilla pudding mix and 3 cups cold milk until thickened. Fold in 3½ cups whipped topping, 1 tsp mint extract, and optional green food coloring. Pour over the chocolate layer and spread evenly.
  4. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  5. Serve with optional whipped cream, maraschino cherries, and green sprinkles on top.
