Preparation Steps
- Begin by heating a cast-iron skillet or griddle over medium-high heat for about 5 minutes. To test if it's ready, sprinkle a droplet of water onto the surface; it should sizzle and evaporate quickly.
- While your skillet warms up, take each large flour tortilla and lightly brush the outside with a thin layer of mayonnaise.
- Next, divide the 1 pound of ground beef into four equal portions. Smash a quarter of the beef onto one half of each tortilla, spreading it thinly.
- Carefully place the beef side down in your pre-heated skillet. Let it cook for 2-3 minutes without moving it.
- Once the beef is beautifully browned, gently flip the tortilla over using a spatula. Sprinkle your cup of shredded cheese over the beef.
