For Toppings
  • Toppings (Optional) Note: Get creative with unique toppings like kimchi or crushed chips for an extra crunch!

Equipment

  • cast-iron skillet

Method

Preparation Steps
  1. Begin by heating a cast-iron skillet or griddle over medium-high heat for about 5 minutes. To test if it's ready, sprinkle a droplet of water onto the surface; it should sizzle and evaporate quickly.
  2. While your skillet warms up, take each large flour tortilla and lightly brush the outside with a thin layer of mayonnaise.
  3. Next, divide the 1 pound of ground beef into four equal portions. Smash a quarter of the beef onto one half of each tortilla, spreading it thinly.
  4. Carefully place the beef side down in your pre-heated skillet. Let it cook for 2-3 minutes without moving it.
  5. Once the beef is beautifully browned, gently flip the tortilla over using a spatula. Sprinkle your cup of shredded cheese over the beef.
  6. Return the stuffed tortilla to the skillet and let it grill for another 1-2 minutes.
  7. Allow the Smashburger Quesadillas to rest for about a minute to set the cheesy goodness inside. Then, slice each quesadilla into triangles for easy serving.
