  • 1 tablespoon Fresh Lime Juice
  • 3 tablespoons Herbs (Parsley, Dill, Chives) Chopped

Method
 

Steps for Preparation
  1. Preheat your oven to 425°F (220°C). Gather your ingredients.
  2. Grate the super firm tofu using the largest holes of a box grater.
  3. In a mixing bowl, combine grated tofu with cornstarch, tamari, and seasonings. Toss to coat.
  4. Spread the seasoned tofu mixture on a lined baking tray. Bake for 15 minutes.
  5. Toss the tofu after 15 minutes and bake for an additional 10 minutes.
  6. Mash ripe avocado in a bowl, then mix in chopped herbs, garlic powder, lime juice, and salt.
  7. Assemble each sandwich by spreading herbed avocado on English muffin halves, topping with smoky tofu and veggies.
  8. Wrap sandwiches tightly in parchment and foil for meal prep. Store in the fridge for up to 3 days.
