Step-by-Step Instructions for Spinach Ricotta Bites
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the fresh spinach and sauté for about 3-4 minutes until wilted.
  3. In a large mixing bowl, combine the ricotta cheese, grated Parmesan, garlic powder, and chopped spinach. Stir in a beaten egg until well mixed.
  4. Gradually mix in the breadcrumbs, and season with salt and pepper to taste until well blended.
  5. Scoop about a tablespoon of the mixture and roll it into bite-sized balls. Place on the prepared baking sheet.
  6. Bake for about 20 minutes, flipping halfway through until golden brown and crispy.
